Recipe of the week


Cashew nut smoothie  



This is an awesome protein hit full of good fats, minerals including magnesium and a 0 cholesterol count, so great for anything to do with muscles including our hearts. 




Ingredients


makes 3-4 generous servings
1 cup raw unsalted cashew nuts
1-2 cups of filtered water
1 generous hand full of frozen blueberries
2 bananas
1 tablespoon of pure unadulterated honey *
You can replace the bananas and blueberries with what ever you like really, or the cashew milk on its own is pretty tasty. Try out mango and banana. mmmmm.


Method


Grab a big bowel chuck in the nuts and cover with water. Soak them for at least 1 hr.
If you have a cold press juicer** run the nuts through to make a nut butter, if you don't have a cold press, pop the nuts with a generous splash of water in the food processor until you get a smooth paste.
Add all ingredients to food processor add water till you get you desired consistency. If you want a thick shake less water if you want a smoothie a more water.


Serve it up and enjoy.


When i make this i make a little extra and put the leftover in a jar and refrigerate for an easy breakfast :)
